Seitan Bacon

Yield: 1 pound of bacun

You'll Need...

  • Meat side
  • 1 Cup Chickpeas liquid drained and saved (aquafaba)
  • 1/2 Cup Aquafaba
  • 1 tsp garlic powder
  • 1 1/2 tsp smoked paprika
  • 1 tbsp Mushroom seasoning
  • 1 tbsp sesame oil
  • 1 tsp marmite
  • 1/2 tbsp tomato paste
  • 1 1/2 tsp liquid smoke
  • 1 tsp apple cider vinegar
  • 1/2 tsp maple syrup
  • 1 cup of vital wheat gluten - do not add this during processing step
  • fat side
  • 1/2 cup vital wheat gluten
  • 1/2 cup aquafaba

Directions

  1. Meat side
  2. Add chickpeas and everything from meat side to blender or food processor and process until very smooth.
  3. Pour mixture into bowl of stand mixer
  4. add 1 cup of vital wheat gluten to mixer and kneed on a low speed until well combined 5-10 minutes
  5. Dived ball in two and let rest while making fatty side
  6. For fat side
  7. add vital wheat gluten and aquafaba to stand mixer and allow to kneed on low speed for 5-10 minutes
  8. stretch out meat side to be 2 even pieces that are as long as bacon and around 5-6 inches wide and less than 1/2" thick
  9. lay fat on top of meat side and stretch to cover
  10. lay second meat side on top
  11. then lay final fat piece on top of that and stretch to cover.
  12. Salt and pepper all sides
  13. wrap in plastic wrap or bees wax and place in freezer until firm
  14. once firm remove from freezer and wrap and slice very thin bacon slices
  15. Fry on low heat with oil of choice flipping once until slightly brown and crispy
