Ingredients
  

  • Meat side
  • 1 Cup Chickpeas liquid drained and saved aquafaba
  • 1/2 Cup Aquafaba
  • 1 tsp garlic powder
  • 1 1/2 tsp smoked paprika
  • 1 tbsp Mushroom seasoning
  • 1 tbsp sesame oil
  • 1 tsp marmite
  • 1/2 tbsp tomato paste
  • 1 1/2 tsp liquid smoke
  • 1 tsp apple cider vinegar
  • 1/2 tsp maple syrup
  • 1 cup of vital wheat gluten – do not add this during processing step
  • fat side
  • 1/2 cup vital wheat gluten
  • 1/2 cup aquafaba

Instructions
 

  • Meat side
  • Add chickpeas and everything from meat side to blender or food processor and process until very smooth.
  • Pour mixture into bowl of stand mixer
  • add 1 cup of vital wheat gluten to mixer and kneed on a low speed until well combined 5-10 minutes
  • Dived ball in two and let rest while making fatty side
  • For fat side
  • add vital wheat gluten and aquafaba to stand mixer and allow to kneed on low speed for 5-10 minutes
  • stretch out meat side to be 2 even pieces that are as long as bacon and around 5-6 inches wide and less than 1/2″ thick
  • lay fat on top of meat side and stretch to cover
  • lay second meat side on top
  • then lay final fat piece on top of that and stretch to cover.
  • Salt and pepper all sides
  • wrap in plastic wrap or bees wax and place in freezer until firm
  • once firm remove from freezer and wrap and slice very thin bacon slices
  • Fry on low heat with oil of choice flipping once until slightly brown and crispy
