Seitan or Wheat Gluten is something I didn’t think could really be tinkered with. I have seen so many different recipes but the end result is always pretty simular. Its a great meat replacement… So how can we make Seitan better? I found a way

More meaty, chicken like Seitan

You'll Need...

  • 1 Cup Vital wheat gluten
  • 1/2 Cup Pea Protein (or any protein)
  • 1 cup of water
  • 2 tsp sage
  • 1 tsp sugar
  • 1/2 tsp Onion Powder
  • 1 tsp Sodium alginate
  • 1 tsp Calcium Chloride
  • 1 tbsp Lightly flavored oil

Directions

  1. Using a blender or food processor mix 3/4 cup of water with the sage, onion powder, sugar and Alginate
  2. Blend on low speed until combined and you have a alginate gel, set aside
  3. add calcium to the remaining 1/4 cup water
  4. Using a stand mixer with dough hook combine Wheat Gluten with pea protein and mix
  5. add the oil to the alginate gel and pour into stand mixer while mixing
  6. once combined add calcium mixture and kneed for 10-15 minutes
  7. let rest for 15 minutes
  8. kneed for at least 20 minutes
  9. remove dough and roll into log
  10. wrap tightly with wax paper and then foil
  11. steam for at least 2 hours
  12. Enjoy
