After I made the smoked watermelon I knew that I wanted to try it again, this time I made the watermelon steak recipe a lot quicker and turned it into a Watermelon Steak Katsu Sandwich… AKA the Wagyumelon Sando! I got this idea after seeing a video featuring Ducks eatery.. again… selling a watermelon steak katsu sando and knew I had to do it!

Watermelon Steak

Turn your watermelon into a meaty steak!
You'll Need...
- 4 Watermelon sliced to 2" thick slabs bread size
- 1/4 cup soy sauce
- 1/4 mirin
- 1/2 Tablespoon liquid smoke
- 1 1/2 Tablespoon vegan worcestershire sauce
- touch of paprika
- 1 tablespoon olive oil
- 1 tablespoon dark brown sugar
- salt & Black pepper
- 1/2 stick butter
Directions
- Pat dry and salt watermelon let sit on paper towel while preparing brine
- Mix together Soy sauce, mirin, liquid smoke, worcestershire, paprika, olive oil, and brown sugar until dissolved.
- Salt and pepper to taste
- Coat each slice of watermelon very thick and set in deep baking sheet or roasting pan
- pour reminder of brine over watermelon
- add 1/2 tablespoon of butter to the top of each slice of watermelon
- bake in 350º preheated oven for 1 hour & 45 minutes
- To make Katsu
- Coat each watermelon steak in flour
- dip in egg
- dip in flour
- dip in egg
- coat in panko
- fry in deep fryer at 375º until golden brown
