Vegetarian Manapua with Mushrooms & Red Bean Paste

I wanted to go Hawaiian vegetarian style with this one and make Mushroom Manapua. Manapua is essentially the hawaiian Bao! Manapua literally means delicious pork thing but like all food, over time, different fillings have been added!
Today we are going to make Mushroom manapua and stick to the end for a Red Bean Manapua

Vegetarian Manapua

Manapua is commonly filled with pork. We are going to make them more veggie friendly!

You'll Need...

  • Manapua bun ingredients:
  • 2 1/2 Cups Flour
  • 1/2 Cup Corn Starch
  • 1 Packet Active Dry Yeast
  • 1/3 Cup Sugar
  • 3/4 Cup Warm Water
  • 1/4 Cup Vegetable Oil
  • 2 tsp Baking Powder
  • Mushroom Manapua
  • 2 Large Portabella Mushrooms
  • 1 Medium Green Onion
  • 4 tsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 tsp Plum Sauce
  • Dash of Five Spice

Directions

  1. For the buns
  2. add yeast and warm water (108º) to bowl of stand mixer and allow to bloom for 5 minutes
  3. mix starch, flour, and baking powder together
  4. after yeast has bloomed add flour mix into yeast
  5. give a quick mix then add oil and sugar
  6. set mixer to low speed with a dough hook attachment and kneed until soft smooth dough ball is formed
  7. remove dough ball and add to an oiled bowl. cover and let rest for 2 hours or until doubled in size
  8. removed dough ball from bowl and punch out air and form back into smooth ball
  9. cut into 8 and form into ball shapes
  10. cover with warm damp kitchen towel and let rest for 15 minutes
  11. Once rested push down on dough and roll out into palm sized circles
  12. fill with choice of filling close up
  13. place on parchment paper and steam for 10-12 minutes
  14. enjoy
  15. Mushroom filling makes 4 manapua
  16. chop mushrooms and green onion
  17. In a mixing bowl coat in a small amount of olive oil
  18. salt and pepper
  19. Oil a cast iron skillet over medium heat
  20. add green onion and cook until translucent
  21. add mushrooms and cook until slightly soft
  22. then add sauces mix will
  23. add five spice
  24. simmer on meduim heat until sauce reduces and thickens
  25. remove from heat and use to fill manapua
