Making Vegan Salmon With Carrots / Radish / Beets / Pepper

I kept getting asked to try the vegan carrot salmon, but I knew that would probably work well and there was a lot of different recipes so lets try them all! Vegan Carrot Lox, Vegan Daikon Lox, Beet Lox, and Pepper Lox!

Vegan Lox

Use your vegetable of choice. I recommend either 3-4 carrots

You'll Need...

  • 2 lbs cores Kosher salt
  • 1 Cup water
  • 1/2 cup soy sauce
  • 1 tsp white vinegar or rice vinegar
  • 1 tsp caper liquid
  • 1/2 tsp smoked paprika
  • 1/4 tsp liquid smoke
  • 1/2 tbls Kelp Granules
  • 1 tbls light flavor oil

Directions

  1. Wash and clean your veggie. Do not dry
  2. Preheat oven to 425
  3. Pour enough salt to cover bottom of a glass baking dish
  4. add vegetables to salt and cover veg with salt
  5. Bake for at 30-40 minutes check after 20 minutes for rubbery texture
  6. Add water to a large bowl adding the rest of the sauces and seasonings
  7. once vegetables have cooled slice into thin salmon sized slices
  8. place in container and cover with seasoning sauce, cover and refrigerate for at least 1 day.
  9. Enjoy
