Making Vegan Salmon With Carrots / Radish / Beets / Pepper

I kept getting asked to try the vegan carrot salmon, but I knew that would probably work well and there was a lot of different recipes so lets try them all! Vegan Carrot Lox, Vegan Daikon Lox, Beet Lox, and Pepper Lox!

Ingredients
  

  • 2 lbs cores Kosher salt
  • 1 Cup water
  • 1/2 cup soy sauce
  • 1 tsp white vinegar or rice vinegar
  • 1 tsp caper liquid
  • 1/2 tsp smoked paprika
  • 1/4 tsp liquid smoke
  • 1/2 tbls Kelp Granules
  • 1 tbls light flavor oil

Instructions
 

  • Wash and clean your veggie. Do not dry
  • Preheat oven to 425
  • Pour enough salt to cover bottom of a glass baking dish
  • add vegetables to salt and cover veg with salt
  • Bake for at 30-40 minutes check after 20 minutes for rubbery texture
  • Add water to a large bowl adding the rest of the sauces and seasonings
  • once vegetables have cooled slice into thin salmon sized slices
  • place in container and cover with seasoning sauce, cover and refrigerate for at least 1 day.
