Last time I tried to make Mozzarella I failed. I tried half a dozen different gallons of milk, different styles or rennet and nothing worked. I gave up on making mozzarella but after a bunch of suggestion I went to the farm and bought some raw fresh cows milk! Wow what a difference it makes. Now every state has different laws on raw milk and I don’t even suggested doing this because there is a possibility of contaminations and getting sick… In Florida raw milk is sold as “not for human consumption”… I did it anyway.
So if you are going to try making mozzarella just find the freshest milk you can find!
