Making ARBY’s Roast Beef from a RADISH!

I saw Will Horowitz from Ducks Eatery turning a radish into Prosciutto so I thought maybe I could turn it into beef and make an Arby's roast "RADISH" Beef!

Ingredients
  

  • 1 Water melon radish
  • 1 lb coarse salt
  • 1 egg replacer
  • 3 tbls water
  • 1 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/3 tsp liquid smoke
  • 1 1/2 cups water
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup light oil
  • 1/2 tsp liquid smoke
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tsp marmite
  • pinch of dried Italian parsley

Instructions
 

  • Mix egg replacer with 3 tbls water, black pepper, liquid smoke, garlic powder
  • coat entire outside of radish in egg mixture
  • fill bottom of glass baking dish with coarse salt
  • add radish to baking dish and cover entirely in salt
  • bake 425 for 40 minutes
  • slice radish in half and alow to cool
  • slice in very thin slices on mandolin
  • Make brine with remaining ingredients
  • heat on low heat until mixed together
  • put radish into sealable storage container
  • pour brine over radish
  • let set overnight in refrigerator
  • next day remove radish from brine and allow to drip
  • steam for 30 minutes
  • enjoy radish “beef”
