Roasted Radish "Beef"

You'll Need...
- 1 Water melon radish
- 1 lb coarse salt
- 1 egg replacer
- 3 tbls water
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1/3 tsp liquid smoke
- 1 1/2 cups water
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup light oil
- 1/2 tsp liquid smoke
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 1 tsp marmite
- pinch of dried Italian parsley
Directions
- Mix egg replacer with 3 tbls water, black pepper, liquid smoke, garlic powder
- coat entire outside of radish in egg mixture
- fill bottom of glass baking dish with coarse salt
- add radish to baking dish and cover entirely in salt
- bake 425 for 40 minutes
- slice radish in half and alow to cool
- slice in very thin slices on mandolin
- Make brine with remaining ingredients
- heat on low heat until mixed together
- put radish into sealable storage container
- pour brine over radish
- let set overnight in refrigerator
- next day remove radish from brine and allow to drip
- steam for 30 minutes
- enjoy radish "beef"
