About a year ago I made Stretchy Ice cream, I used Salep and it’s hard to find… and depending on where you live its banned! I also didn’t really finish the recipe last time! So this time we are making an EASY stretchy ice cream without salep! This ice cream stretches just like the original but A LOT EASIER!!!

Stretchy Ice Cream with no Salep

You'll Need...
- 4 Cups of whole milk
- 10 grams of Konjak Flour - Sold as glucomannan powder
- 2 grams of tapioca starch
- 225 grams Sugar
- pinch of Mastic - Not needed, only flavoring and does add minor stretch. You can use flavoring of your choice
Directions
- Heat 3/4 of the milk up to 88ºF Constantly stirring
- add most of the sugar leaving a table spoon aside
- Heat mixture up to 122ºf constantly stirring
- Whisk in the Kanjak flour and Tapicoa starch
- Grind Mastic and half of the remaining sugar together
- add remaining milk to mastic mixture and whisk everything together
- Simmer whole mixture for 15 minutes constantly stirring
- Add mixture to bowl of stand mixer with whisk attachment and whisk for 1 hour or until mixture has cooled to 75ºf
- Using a double-bowl ice setup or ice cream maker pour mixture into ice cream maker and churn until soft serve consistency is formed. about 15-30 minutes if ice cream maker can not handle thickness churn by hand
- Freeze for 6-10 hours mixing every few hours
- Remove from freezer and kneed quickly until stretch is achieved
