I’ve been really interested in reading about athletes diets considering they are commonly doing a lot of research and have a lot invested in staying healthy and fit. One thing I kept reading about was how Lewis Hamilton enjoys a plant based curry but he felt it was too fattening… so I lowered the fat and added more protein and it came out incredibly good!

Why I’m only bringing Tofu for the Holidays this year… Trader Joes discontinued their vegan roast so I thought I would make my own and I wanted something simple… This stuffed vegan turkey is light, meaty, tastes amazing, and is super easy to make!

Making Shredded Beef from Carrots and it’s REALLY GOOD… like really good! I’ve made carrot beef in the past and it came out incredible, but this shredded version is even better in my opinion! WOW – Tofu sloppy joes are Incredible… like REALLY good! I have always been obsessed with Sloppy Joes.. it’s one of my favorite sandwiches ever! Growing up my mom made it really simple, but it was the best! When I saw the video of @BrianLagerstrom making an elevated sloppy Joe I knew I had to try the recipe! But I was already working on another ground tofu recipe which will now come out later, so I switched gears and used it for the elevated vegan sloppy Joe recipe I made here and I am soooo glad I did!
and yes I had these for lunch and dinner for the next 3 days hahahah they were that good!
