LION’S MANE Mushroom Crab Cakes

As soon as you get your hands on the Lions Mane Mushroom you immediately smell a faint lump crab smell. Very seafood like, but as you tear into the lion's main mushroom you start to see a uncanny resemblance! Lets take this mushroom and make some crab cakes with it!

Ingredients
  

  • 1/2 pound Lions Mane Mushroom
  • 3 cloves garlic
  • Olive Oil
  • Salt Pepper
  • 1 egg replacer
  • 1 teaspoon soy sauce
  • 1 teaspoon rice wine vinegar or white vinegar
  • 1/2 teaspoon Molasses
  • 2 tablespoons Vegan mayo
  • Lemon
  • Parsly
  • 1/4 cup red onion chopped
  • 1/2 teaspoon old bay
  • 1/4 cup panko bread crumbs
  • 1/2 cup bread crumbs

Instructions
 

  • Pull Lions mane mushroom into crab like texture
  • add garlic and a touch of olive oil to lightly coat
  • Place on baking sheet and bake for 20 mins (check frequently)
  • in a separate bowl mix together
  • Egg replacer, soy sauce, vinegar, molasses, and mayo
  • mix
  • add parsley to taste, red onion, and lions mane, old bay and squeeze half lemon juice
  • mix
  • add bread crumbs
  • mix
  • salt and pepper
  • form into balls
  • add olive oil to pan heated on medium heat
  • form crab mushroom mixture into balls then flatten into cakes
  • heat for 3 minutes on each side

    This is an excellent recipe. It also works well with oyster mushrooms. In my opinion, the oyster mushrooms have a more “crab-like” taste but the lion’s mane has a more crab like look and texture. I made variations of this recipe including a retro version that includes pimentos and celery. Saucestache is an awesome cook and has great recipes!
